KOMPAS.com - Yu sheng adalah makanan khas Imlek yang terbuat dari sayuran segar, buah-buahan, kerupuk, dan tambahan ikan mentah.
Dalam budaya keluarga Tionghoa, yu sheng dilambangkan sebagai simbol kemakmuran. Namun, cara menikmatinya berbeda dengan salad biasanya.
Setiap anggota keluarga harus mengangkat yu sheng setinggi mungkin saat menyantapnya. Semakin tinggi seseorang mengangkatnya, makin besar pula harapan mereka terkabul.
Perlu diingat bahwa yu sheng terbuat dari banyak bahan. Oleh karenanya, akan lebih baik jika kamu sudah mempersiapkan bahan-bahan tersebut beberapa hari sebelum perayaan Imlek berlangsung.
Misalnya, hari pertama menggoreng kerupuk terlebih dulu lalu simpan dalam stoples. Berikutnya, parut sayuran dan buah-buahan lalu simpan dalam kulkas.
Selanjutnya, siapkan juga bahan untuk dressing saladnya. Trik ini dapat mempersingkat waktu saat membuat yu sheng.
1. Campur minyak wijen, air, dan saus plum dalam satu wadah. Aduk rata dan sisihkan.
2. Parut mentimun yang sudah dihilangkan bijinya menggunakan parutan berongga agak besar. Parut juga wortel dan lobak putihnya. Kupas kulit jeruk bali dan ambil daging buahnya. Sisihkan.
3. Iris tipis ubi ungu kemudian gurih sampai kering. Sisihkan.
4.Kerupuk gandum: Campur tepung serbaguna, garam, dan mentega dalam satu mangkuk, aduk rata. Tambahkan air sedikit demi sedikit sampai membentuk adonan lembut.
Ratakan adonan dan potong berbentuk persegi panjang kecil. Panaskan minyak dengan api sedang lalu goreng hingga berwarna coklat keemasan. Tiriskan dan sisihkan.
5. Siapkan piring saji berukuran besar. Tata semua bahan untuk yu sheng di bagian pinggirnya lalu letakkan potongan daging salmon di tengahnya.
Tambahkan minyak zaitun, saus plum yang sudah dicampur, bubuk lima rempah, biji wijen, dan kacang tumbuk di saladnya. Yu sheng siap dinikmati bersama keluarga.
