Risk of Rain 2 hermit crabs are strange looking creatures and seem to have no purpose, but that's not entirely true. There is an achievement to knock off 20 hermit crabs off a cliff.
It's not as easy at it sounds.

Risk of Rain 2 Hermit Crab: How to Get 'The Demon and the Crabs' Achievement
You need to loop through all the maps at least once. Then you can head to the Titanic Plains level. The map stays the same, but the creatures are different.
The strategy is straightforward. Stay near the spawn and kill the waves of enemies that come at you. Once a crab spawns and starts spewing boulders at you. If you move toward them, they run away, so guide them toward a cliff.
Do that 20 times and you'll earn a new item.
