Q: We’ve been going to Sushi Ray in Boca Raton for 20 years. Our favorite thing, besides the sushi, is the Cold noodle appetizer served before all meals and the Ginger dressing. Any chance that Ray would share these recipes? Thanks. — Beth Grossman, Boca Raton
A: Nope, not a chance. Sorry to be the bearer of bad news but I couldn’t persuade the-powers-that-be at Sushi Ray (5250 Town Center Circle, Boca Raton; 561-394-9506; sushiray.com) to share. On a brighter note, as a consolation, I am sharing a recipe I’ve enjoyed through the years. They did divulge the noodle components, so try the dressing and tweak according to your personal taste. Adjust ingredient amounts for a sweeter or saltier flavor combination. You could easily turn this dish into an entree by adding veggies, such as shaved radish or daikon, snap peas, shredded carrot, cucumbers, red cabbage, mushroom, scallions, bean sprouts or nori. For a heartier meal, top with grilled steak, shrimp or chicken. Here’s hoping this recipe at least holds you over until your next visit.
Recipe: Cold noodle salad with ginger dressing
Ramen, soba or udon noodles can be substituted for rice noodles.
1 large egg
1 teaspoon vegetable or canola oil
3 tablespoons soy sauce
1 tablespoon sugar
3 tablespoons rice vinegar
2 tablespoons sesame oil
1 teaspoon freshly grated ginger
8 ounces rice noodles, cooked according to directions, chilled in ice bath and drained
2 teaspoons toasted sesame seeds
Salt, to taste
1 Using a small bowl, whisk the egg with a pinch of salt. Heat a small non-stick saute pan over medium heat, add the oil to coat. Pour enough egg into the pan to form a thin crepe. Cook until just set. Using a spatula, flip and cook the other side. Repeat process with remaining egg. Stack the egg “crepes” and roll them together. Slice the egg as thinly as possible, set aside.
2 Using a small bowl, whisk together soy sauce, sugar, rice vinegar, sesame oil and ginger. Season with salt, to taste.
3 Place noodles and egg in a large bowl. Toss with dressing and sesame seeds.
Makes 4 servings.
