Bahan 

  • 3 buah wortel, kupas, iris
  • 150 gram bengkuang, kupas, potong korek api
  • 25 gram jamur kuping, rendam dalam air hingga mengembang
  • 15 bunga sedap malam kering, rendam dalam air hingga lunak
  • 50 gram sohun, rendam dalam air hingga lunak
  • Bawang goreng secukupnya untuk taburan

Bahan kaldu

  • 2 liter air
  • 1 ekor ayam, potong jadi 4 bagian
  • 1 batang seledri
  • 1 batang wortel

Bumbu kuah

  • 2 sdm minyak goreng
  • 3 siung bawang putih, memarkan
  • 150 gram udang kecil, buang kulitnya
  • 5 cm jahe, memarkan
  • 2 sdt garam
  • 1 sdt merica bubuk
  • 2 sdm kecap manis

Bahan sambal

  • 2 cabai merah besar
  • 7 cabai rawit merah
  • 2 siung bawang putih
  • 1 sdt garam
  • 1 sdt cuka masak

Cara membuat sup kimlo

  1. Kaldu: masak air bersama daun bawang, seledri, dan wortel sampai mendidih. Masukkan ayam, masak dengan api sedang sampai ayam lunak. Angkat ayam, tiriskan.
  2. Potong ayam bentuk dadu kecil dan saring kaldu ayam.
  3. Kuah: panaskan minyak goreng. Tumis bawang putih sampai harum. Masukkan udang, masak sampai berubah warna.
  4. Masukkan tumisan bawang putih ke dalam kaldu. Tambahkan jahe, garam, merica, dan kecap manis.
  5. Masukkan wortel, bengkuang, jamur kuping, dan bunga sedap malam. Masak sebentar. Masukkan potongan ayam, masak sebentar. Angkat.
  6. Sambal: rebus cabai dan bawang. Kemudian haluskan bersama garam dan cuka.
  7. Penyajian: siapkan mangkuk. Beri sohun secukupnya, tuang kuah dan isiannya. Taburkan bawang goreng. Sajikan kimlo bersama sambal.
